Importance of Rice crop

1. It is the staple food crop for more than 60% of the world people.

2. In other countries attractive ready to eat products, which have, long shelf life eg. popped and puffed rice, instant or rice flakes, canned rice and fermented products are produced.

3. Protein is present in aleuron and endosperm 6 to 9% and average is 7.5%.

4. Rice straw is used as cattle feed, used for thatching roof and in cottage industry for preparation of hats, mats, ropes, sound absorbing straw board and used as litter material.

5. Rice husk is used as animal feed, for paper making, as fuel source.

Puffed rice

 

1. Puffed rice is puffed rice grain made by heating rice kernels under high pressure in the presence of steam, though the method of manufacture varies widely.

2. Traditional puffed rice called muri is made by heating rice in a sand-filled oven. Muri is to rice as popcorn is to corn.

3. Puffed rice is used in snack foods and breakfast cereals, and is also a popular street food in some parts of the world.

Puffed rice (Murmura/Marmara)

Rice is soaked in salt water, drained and mixed in with hot sand, which puffs it up. This crunchy snack can be eaten straight or mixed with various additives.

Sample Recipe :Jhal Muri (Puffed rice salad ) Take three handfuls of puffed rice. Mix in half a handful of crushed, roasted peanuts, three pinches of grated coconut, a chopped green chili, half a handful of chopped onion and a dash of oil. ( Bihar / Bengal /Orissa)
